Happy Thursday, friend!
This past Sunday was Easter, which for many people means dressing up like a bunny and looking for plastic eggs in their backyards. (And maybe eating a bit too much cheap chocolate.)
And while I think these kind of traditions are fun and innocent enough, I want to remind everyone what the true meaning behind Easter is.
You might see a lot of people posting the phrase “He Is Risen” along with their Easter posts. What this refers to is the fact that Jesus was resurrected from the dead on the third day after his crucifixion.
On Easter, we celebrate the knowledge that the tomb was empty and Christ has defeated death.
And not only has he defeated death, but he has also defeated ALL that creates death in our lives.
There are so many negative emotions and beliefs that suck abundant life away from us. This includes fear, anxiety, anger, shame, lust, greed, and hopelessness.
But know this… Anything that you’re struggling with right now has already been defeated by Jesus. The only thing you have to focus on is claiming that truth for yourself.
This might seem heavy, but I was inspired to write this post after listening to some amazing testimonies at our church on Sunday. One of which included a young woman who had been sexually abused as a young girl.
Her story of overcoming the shame and fear that was deep-seeded in her soul – thanks to God’s intervention – was amazing and truly inspiring!
Her brave testimony stirred up a fire in me to share God’s love and power with all of you, since if you’re anything like me you probably struggle with some type of negative emotion or negative belief that is holding you back from living your best life.
So remember…
He’s already defeated ______ for you (fill in the blank with whatever you’re struggling with.)

Paleo Sunshine Stack
Start the day sunny side up with this island inspired breakfast! Haven’t cooked with plantains before? Here’s a great opportunity to fall in love with their versatility and health benefits.
Plantains are a tropical staple, rich in carbohydrates, Vitamin B6 and C, potassium, magnesium and fiber. They are generally less sweet than bananas and taste awesome grilled, fried (in healthy fats), or baked and paired with quality proteins, fruits, and veggies.
Cooking for a group? Just multiply the ingredients by however many servings you need to prepare!
Paleo Sunshine Stack
Prep time: 5 min / Cook time: 15 min / Total time: 20 minutes
SERVES 1
1 serving = 412 calories, 18g fat, 21g protein, 40g carbs, 3g fiber
Ingredients
- 1 tsp fat of choice (e.g. Coconut oil or Butter)
- 1/2 Plantain, sliced lengthwise
- 2 slices Organic or Pasture-raised Bacon
- 2 large Eggs
- 2 slices Fresh Pineapple, ~⅓ inch thick each
- ¼ cup Bell pepper, sliced
- 1 cup Arugula
- Lime, quartered
- Salt and pepper, to taste
Directions
- Heat a large skillet to medium and melt the coconut oil or butter.
- Add the plantain slices and cook until golden on both sides.
- Pan fry or bake the bacon to desired crispiness.
- Poach or pan-fry the eggs (you can use the leftover bacon fat to do this).
- Arrange the cooked ingredients with the pineapple, bell pepper and arugula. Drizzle with lime juice and season with salt and pepper.
